Not only is this soup filling and keto, but it’s like eating a delicious bacon cheeseburger in a bowl! My husband was amazed at the depth of flavor. He loves this soup! I love soup year-round, but now that it’s cooling down, this can be one of your comfort food stand bys too!

Keto Bacon Cheeseburger Soup
Ingredients
- 6 c beef broth
- 1/2 pound bacon, cut into small pieces
- 4 pickle spears, chopped
- 2 T spicy brown mustard
- 1 tsp sea salt
- 1/2 tsp pepper
- 1 pound ground beef
- 1 small onion, diced
- 1 clove garlic, crushed
- 4 c shredded cheddar cheese
- 1/2 c heavy cream
Instructions
- Cook bacon pieces in a large stock pot until crispy. Remove from pan and drain on a paper towel
- Drop onion pieces into bacon fat and cook until tender
- Add ground beef and cook until browned
- Add mustard, salt, pepper, and garlic as well as beef stock
- Bring to a boil and cook about 5 minutes
- Add cheese and stir until melted into broth
- Add cream and remove from heat
- Top individual bowls with pickle and bacon pieces
Instant pot cheeseburger soup
This soup would be soup-er easy to make in an instant pot too! You’d just have to use the saute feature to cook the bacon, soften the onion, and cook the ground beef. Then set it to soup and let it come up to a boil to marry all the flavors. Then release the steam and open it back up to melt in the cheese and add the cream at the end. Easy peasy lemon squeezy!
You can serve a crusty piece of bread or crackers with soup if you’re not going for keto. The crispy bacon bit garnish makes great texture if you are going keto with the soup. Cauliflower bites would be a great veggie with a crunchy texture. Turnip fries would be yummy and go with the burger and fries theme.
A salad is always a great accompaniment to soup. This soup doesn’t have many veggies, so salad is a great option to add nutrients to the meal. You could try this zesty avocado salad or cucumber salad, or a yummy green salad with the world’s best homemade ranch dressing. I also have a wonderful citrus balsamic dressing as well. You’re gonna love these more than store-bought dressings. They are amazing!
Don’t forget some roasted vegetables like this roasted broccoli or roasted veggies with garlic bread seasoning mix.
Can you freeze bacon cheeseburger soup?
This cheeseburger soup does freeze well. If you want the best results, freeze the part you want to eat later before you add the cream. It can break in the thawing process. So think about that too.
If you freeze it, just set it in the fridge the night before you want to use it and then heat it in the microwave or in a pan on the stove. Then add your cream before serving. It’s so great to have a meal that you love already waiting for you in the freezer. I love freezer meals!
