Almost every child I keep loves broccoli roasted. My family loves it too. You don’t have to use garlic and parmesan but it makes it oh so delicious. You can try it both ways and see what you think.

Broccoli is super good for you and a lot of people think they don’t like it because they haven’t had it prepared well. This technique gives it the most flavor and best texture of any I’ve tried. You can roast most any veggie this way and come up with a ton of tasty treats.

How to roast broccoli

To roast vegetables, just cut them into bite-sized pieces, sprinkle your seasonings over the top on a baking sheet, and drizzle with some olive oil. Toss it well and cook it in the oven until done. This garlic parmesan roasted broccoli recipe is so good because toasty parmesan cheese makes everything awesome.

A tip for cooking broccoli with any preparation is not to cook it too long. If you overcook it, it loses that bright green color and tastes mushy and bitter. Watch it closely, there’s a sweet spot between not cooked enough and grey and lifeless.

Ingredients

  • 1 pound fresh broccoli (can use frozen if preferred)
  • 1/4 cup grated parmesan cheese
  • 1 clove crushed garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  • Cut broccoli into bite sized pieces
  • Sprinkle with salt, pepper, garlic and parmesan cheese
  • Toss to coat well
  • Roast in 400 degree oven until broccoli is bright green and edges are slightly browned, about 15 minutes
