There is nothing we like better at Little Sprouts than roasted vegetables. But air fried roasted vegetables have really upped our vegetable loving game! We love a big sheet pan of veggies for a meatless meal once in a while. I love all the Ninja Foodi Air Fryer Recipes I’m learning to make.

You can certainly make delicious roasted vegetables like this garlic parmesan roasted broccoli in the oven and they are delicious. In fact, roasting vegetables has helped me, my husband, and dozens of daycare kids learn to love things we didn’t like before.

So use this recipe in the oven, convection oven, or whatever you have. But air fried vegetables have an even more lovely texture. So if you have an air fryer, try air frying vegetables in it. I think it’s going to be a game changer for you.

Originally, I wanted an air fryer because I was watching one of my daycare mom’s stories. She was working her fitness journey and she’s not a veggie lover. In fact, I can remember her making fun of me years ago for feeding her son brussel sprouts.

But then, she started trying to like vegetables herself and she air fried some asparagus. And it looked sooo good. I loved how fast she made it and how yummy her tutorial looked. So I wanted to get an air fryer.

But there are so many different kinds. What in the world do you choose? I was overwhelmed and never bought one. I tried to research them several times. I tried to ask questions of other friends on facebook and other daycare providers. But no one was really making the kind of food I wanted to make, food like that air fried asparagus I saw.

So I eventually just let that idea go. But I had the air fryer I thought I might want in my Amazon wish list just in case I could figure it out. To my surprise, my daycare parents showered me with crazy cool gifts for Christmas this year. And one of the things they got me was the air fryer oven I had in my list.

I can’t believe their generosity and kindness. I don’t really feel like I deserve it. But they do, so they did it. Now I could make all the air fryer roasted vegetables of my dreams! I opened it up. It was bigger than I imagined, but I reconfigured my kitchen to make it work. And now I use it quite often, so it’s worth the real estate I use for it.

Seasoning for vegetables

My sister and I had come up with a really good seasoning mix when my family was together making spice mixes. We love to make homemade flavorings for our food because we know what’s in them and know they are healthy. We made a new one this time for garlic bread seasoning and man is it good! We’ve been using it on everything.

Again, it’s a win for roasted vegetables. I hope you make some of this mix for yourself because you’re going to love it.

The seasoning has Italian herbs with garlic powder. It makes wonderful Italian roasted vegetables. I’m getting hungry all over again right now.

Air fryer vegetable recipes

In my Ninja Foodie XL air fryer oven, I was able to make all of these roasted vegetables at once for my kid’s lunch and we can have them for dinner and the kids and I can have them a third time the next day. Bulk cooking is a great way to save time in the kitchen.

This time I made brussel sprouts, cauliflower, broccoli, and green beans. The green beans were my favorite out of this batch. But all of it was AMAZING!

All it takes is vegetables of your choice chopped into similar sized pieces. I would take one head of cauliflower, or a pound of fresh green beans, or two crowns of broccoli, etc. Then sprinkle on 1 tablespoon of garlic bread seasoning mix, and 3 tablespoons of olive oil. Toss to coat.

Stick it in the air fryer. I roasted it on 425 for 12 minutes and they came out perfectly. I used the two-level feature to set two zones, but set them both the same. I used two sheet pans on the racks and the air fryer rack to cook them all at once.

Air Fried Vegetables with Garlic Bread Seasoning

Savory herb seasoned air fried vegetables that are tender and slightly browned to carmelize the wonderful flavors of the vegetables.

Equipment

  • Air fryer or oven.

Ingredients

  • 1 pound cut up vegetables of your choice
  • 1 T garlic bread seasoning mix
  • 3 T olive oil

Instructions

  • Cut vegetables in bite sized pieces
  • Sprinkle with garlic bread seasoning and olive oil
  • Toss to coat
  • Air fry at 425 for 12 minutes or bake in the oven at 425 for about 20 mintues or until edges are slightly browned. Times will vary depending on vegetable type and thickness cut
