If I wouldn’t have had to boil the potatoes, this would have taken less than 15 minutes of cooking time. If you have leftovers, this cooks up in a snap because the turkey is already cooked. You could also use leftover baked or fried potatoes and just mash them a bit. Easy breezy!

Leftover Turkey Corn Chowder
Ingredients
- 4 whole peeled and chopped potatoes
- Water to cover
- 1 onion, chopped
- 1 T butter or oil of your choice
- 3 c cooked turkey meat, chopped
- 1 bag frozen corn
- 1/2 bag frozen peas
- 8 c chicken, beef or vegetable stock
- 1 c leftover turkey gravy (you can omit if you don’t have it)
- Salt and pepper to taste
- 2 c shredded cheddar cheese
- 1 c heavy cream (milk will work, I just had cream left from Christmas)
Instructions
- Cover chopped potatoes with water and boil until fork tender.
- Drain and mash.
- If you have some leftover potatoes of some kind, start with the onion in your pan.
- Place chopped onion in oil in a large pan and cook on low until translucent.
- Add turkey, gravy, corn, peas, mashed potatoes, stock and salt and pepper and bring to a boil.
- Once soup is boiling well, add shredded cheese and cream and stir to combine.
- Turn off the heat and serve.
- You can garnish with bacon bits, green onions or chives, shredded cheese or croutons, but it’s great on its own too.
