After Christmas, we went out of town, so I tossed my turkey and gravy leftovers in the freezer. When I came home, I thawed them out and made this amazing chowder. I boiled up a few potatoes, but if you had leftover mashed potatoes, that would save you even more time! It was one of the best soups I’ve made.

I made this for dinner and then served it the next day to my daycare kids and they TORE IT UP! This is a kid-pleaser, and I have some PICKY kids.

If I wouldn’t have had to boil the potatoes, this would have taken less than 15 minutes of cooking time. If you have leftovers, this cooks up in a snap because the turkey is already cooked. You could also use leftover baked or fried potatoes and just mash them a bit. Easy breezy!

Leftover turkey corn chowder
Great way to use leftover meat! Delicious soup that sticks to your ribs!
- 4 whole peeled and chopped potatoes
- Water to cover
- 1 onion, chopped
- 1 T butter or oil of your choice
- 3 c cooked turkey meat, chopped
- 1 bag frozen corn
- 1/2 bag frozen peas
- 8 c chicken, beef or vegetable stock
- 1 c leftover turkey gravy (you can omit if you don’t have it)
- Salt and pepper to taste
- 2 c shredded cheddar cheese
- 1 c heavy cream (milk will work, I just had cream left from Christmas)

Cover chopped potatoes with water and boil until fork tender.

Drain and mash.

If you have some leftover potatoes of some kind, start with the onion in your pan.

Place chopped onion in oil in a large pan and cook on low until translucent.

Add turkey, gravy, corn, peas, mashed potatoes, stock and salt and pepper and bring to a boil.

Once soup is boiling well, add shredded cheese and cream and stir to combine.

Turn off the heat and serve.

You can garnish with bacon bits, green onions or chives, shredded cheese or croutons, but it’s great on its own too.
This is a very large batch. My daycare kids eat like lumberjacks.
