This hearty hamburger cauliflower soup is nightshade-free, super healthy, keto-friendly, low carb, and is still filling comfort food. It’s a favorite soup recipe idea you can whip up quickly.

Put this on your list of easy dinner ideas. This soup uses simple ground beef and some cauliflower that’s minced up so it eats like rice. I love having an ingredient that feels like grains but is just vegetables. You can even buy frozen cauliflower rice and use that instead of mincing up your own.

If you hate cauliflower and don’t care about grains, you can use other vegetables and just use some rice in the dish cooked according to package directions. It’s a very versatile soup.

My favorite thing about the soup is the little pop of flavor you get from the spicy mustard. It’s very subtle, but it gives it just something that is special and so umami. I can’t explain it, but it’s GOOD!

Hamburger Cauliflower Soup

This hearty beefy keto cauliflower soup will satisfy your taste buds and comfort your soul. The flavor profile is outstanding and the texture is so good!

Ingredients

  • 2 T olive oil
  • 1 onion, chopped
  • 3 carrots, chopped
  • 1 lb ground beef
  • 2 cloves garlic, crushed
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 tsp dried thyme (or 2 T fresh chopped)
  • 6 c beef stock
  • 2 c cauliflower minced (about half a head or you can use frozen store bought cauliflower rice)
  • 1/2 tsp celery seed
  • 1 T spicy mustard

Instructions

  • Chop onion and carrots
  • Place olive oil in soup pot and add onions and carrots
  • Cook on medium heat until vegetables are soft
  • Add beef and cook until browned
  • Add garlic, salt, pepper, thyme, celery seed, mustard and beef stock
  • Cook on medium heat for 25 minutes
  • Add cauliflower and cook 5 minutes more

You could easily make this in your instant pot by setting it on saute to cook the onions and carrots, then browning the ground beef. Add the remaining ingredients and set it on soup. It will meld the flavors perfectly.

You could also use your crock pot to make it by softening the onions and carrots in a skillet, browning the ground beef, and then pouring that and the rest of the ingredients in your crock pot and cooking it on high for 2 hours, or low for 4. If you’ll be gone half a day, you can come home to dinner. I love doing that.

What crackers aren’t good with soup? I love to float those little oyster crackers on soup. They give a little crunchy bite to the soup for a different texture. Ritz crackers and club crackers are two of my favorites. I’m not a big fan of saltines myself, but lots of people like them.

If you’re looking for a different flavor, you can get cheese flavored, jalapeno flavored, or herbs such as basil and anything you’re looking for.

If you want a keto meal, you can get these gluten-free almond crackers, or do a crisp like this parmesan crisp. They are so good! I’ve even seen them at Aldi’s.

You could also serve crostini, bread and butter, chips, or a salad with this soup for a satisfying meal.

My daycare kids LOVE soup and it’s a great meal that usually all of them will eat. Picky kids seem to love soup also. So we have it a lot. This taco soup is a favorite here, as well as this vegetable beef soup that the kids make themselves.

There is also a fun activity to do with soup that helps kids want to eat it even more and gets lots of veggies in them with a friendship soup or stone soup story. My kids have loved it for 26 years. Not only is it yummy, and promotes healthy eating, it’s an activity for the kids to mix it up and it celebrates friendship.
