Should I peel the cucumbers? The skin of a cucumber is edible and isn’t harmful. It comes down to personal choice. The skin of large cucumbers may be a bit tough and bitter so it would be beneficial to peel the cucumber. We find the skin of smaller cucumbers thin and perfectly fine to eat. The skin is packed with nutrients.
Can I make cucumber and tomato salad ahead?
You can make it a little bit ahead. It’s great to let it marry for an hour or two, but storing it in the fridge for a long time makes the tomatoes soggy, so I recommend making it the same day you are serving it.
It can be served after it sits in the fridge overnight if you need a make-ahead meal though. The flavors will definitely marry together better. I like to mix it all up and add the tomatoes right before serving.
Cucumber onion tomato salad
Cucumber and Tomato Salad
Ingredients
- 6 small cucucumbers (or two large), sliced
- 2 c quartered cherry tomatoes
- 1 small onion, sliced into thin strips
- 1 tsp dried dill or 2 tsp fresh basil
- salt and pepper to taste
- 1/2 c apple cider vinegar
- 1 T raw sugar (or white sugar, or honey or no sugar)
- 2 T olive oil
- 1 pkg fresh mozzarella either small bites, separated, or a large ball cut into small pieces.
Instructions
- Mix all ingredients and let stand for 30 minutes to an hour.
- Stir and serve.
Mediterranean cucumber tomato salad
If you want to give your cucumber and tomato salad a Mediterranean twist, use the basil in the recipe and add 1/4 c freshly squeezed lemon or orange juice or a combination. You can leave out the vinegar totally when you do that or reduce the amount to half.
Greek tomato cucumber salad
If you want to give your salad a Greek twist, use 1 tsp of dried oregano instead of the other herbs, chop up 1/4 c kalamata olives to add in, and top with feta cheese instead of fresh mozzarella.
This cucumber and tomato salad is absolutely wonderful made with balsamic vinegar or even red wine vinegar instead of apple cider vinegar. Balsamic is sweeter, so I would omit the sugar if you switched to that.
