cucumber, tomato, onion, fresh mozzarella salad in a yellow bowl

If you don’t have tomatoes, you can make an awesome cucumber salad like this one. There are so many yummy things you can do with a bunch of cucumbers.

Cucumbers and tomatoes are so healthy and you can grow a ton of extras in the garden at the same time, so this recipe gives you a great way to use up both.

This super simple salad is so easy to make, and takes just 15 minutes to make! Makes for a perfect side dish and pairs well with almost everything!

This easy and fresh salad will be your go-to salad once you make it! It needs only a handful of ingredients you most likely have in your pantry and fridge all the time anyways. So making this salad will be hassle-free and one you will absolutely love. Made with cucumbers, tomatoes, and onions. Then tossed in with a tasty dressing!

Should I peel the cucumbers? The skin of a cucumber is edible and isn’t harmful. It comes down to personal choice. The skin of large cucumbers may be a bit tough and bitter so it would be beneficial to peel the cucumber. We find the skin of smaller cucumber thin and perfectly fine to eat. The skin is packed with nutrients.

Can I make cucumber and tomato salad ahead?

You can make it a little bit ahead. It’s great to let it marry for an hour or two, but storing it in the fridge for a long time makes the tomatoes soggy, so I recommend making it the same day you are serving it.

It can be served after it sits in the fridge overnight if you need a make-ahead meal though. The flavors will definitely marry together better. I like to mix it all up and add the tomatoes right before serving.

Mediterranean cucumber tomato salad

If you want to give your cucumber and tomato salad a Mediterranean twist, use the basil in the recipe and add 1/4 c freshly squeezed lemon or orange juice or a combination. You can leave out the vinegar totally when you do that or reduce the amount to half.

Greek tomato cucumber salad

If you want to give your salad a Greek twist, use 1 tsp of dried oregano instead of the other herbs, chop up 1/4 c kalamata olives to add in, and top with feta cheese instead of fresh mozzarella.

Tomato cucumber salad balsamic

This cucumber and tomato salad is absolutely wonderful made with balsamic vinegar or even red wine vinegar instead of apple cider vinegar. Balsamic is sweeter, so I would omit the sugar if you switched to that.

This salad is going to be your new go-to delight. I hope you make some right away because you are going to love it!
