Zesty Avocado Chopped Salad
Ingredients
- 2 avocados
- 1 cucumber, diced
- 1 small red onion
- 1 pkg cherry tomatoes
- 1 pkg baby mozzarella balls
- 1 jalapeno, finely diced
- 2 T. red wine vinegar
- 2 T. olive oil
- 2 limes, juiced
- 1 tsp salt
- 1/4 tsp pepper
- 1 tsp dill (you could use cilantro for a more Mexican flavor)
Instructions
- Cut onion, avocados, tomatoes, jalapeno and cucumber into small dices. Toss in a bowl. Add mozzarella balls, olive oil, vinegar, lime juice, salt, pepper and dill. Mix lightly so you don’t smash the avocados. Let mixture set for at least one hour before serving.
This looks and sounds SO good! I bet it would also be delicious with feta, depending on what kind of flavor you’re in the mood for.
