What is stroganoff?

Stroganoff is a classic Russian dish traditionally made with sautéed pieces of beef served in a rich and creamy sauce with a luxurious and comforting flavor profile. It is often served over egg noodles, rice, or mashed potatoes.

While beef is the most common protein used, variations of stroganoff can also include chicken, pork, or even vegetarian alternatives, allowing for a versatile range of flavors and textures. The dish is beloved for its hearty and satisfying qualities, making it a popular choice for a comforting meal.

We added green powder to our stroganoff to add nutrition without large pieces of vegetables. This is optional.

• If your leftover pork is lightly seasoned, add extra salt, paprika, or ranch seasoning for more flavor.
• Let the sauce simmer long enough to thicken so it coats the noodles nicely.
• Add the sour cream at the end of cooking so it stays creamy and smooth.
• If the sauce becomes too thick, add a splash of chicken broth to loosen it.
• A sprinkle of fresh parsley on top adds color and a fresh flavor.

Delicious and quick to make. I used a left over pork loin roast chopped up into pieces. I added some paprika to the mushrooms and onion mixture and freeze dried parsley as I didn’t have any “green powder”. I also added a couple of handfuls of frozen baby peas. My stock was homemade chicken stock packed with lots of flavour. I pretty much measured with my heart on the extra ingredients. Hubby loved it so will make again.
