I love an easy dinner I can whip up quickly with leftovers! Pork roast is my favorite because it’s super delish but it makes a ton and you can make so many meals with it. I like to cook one pork roast and make these 5 meals on the regular! In fact, I’m a big fan of all quick and easy dinners with pork, aren’t you?

Mac and Cheese with Pulled Pork
Who doesn’t need barbecue pulled pork mac and cheese in their life? I went to a blogging conference recently and they served it there. I was HOOKED! That smokey sweet bbq flavor on creamy rich mac and cheese. I came home and whipped up some of my homemade bbq sauce and got to work on a pork roast. There are so many yummy things to make, but this one takes the cake!
It’s easier because you cook the pasta right in the casserole dish and only have to use one dish! I love any meals that reduce the time I have to wash dishes afterward. Doing dishes stinks.
We have the rule if you cook you don’t have to clean up, so that helps a lot, but I do clean a ton as I go or my poor husband who doesn’t even cook toast around here would really be suffering from all the cleaning. Cooking for 7 kids plus the two of us and making most things from scratch can really build up the mess in the kitchen!
Leftover Pulled Pork Mac and Cheese
Ingredients
- 2 1/2 Cups Cooked Elbow Macaroni
- 2 Cups Cheddar Cheese
- 2 Cups Colby Jack Cheese
- 2 Cups Milk
- 4 Tbs Butter
- 1 Tsp Salt
- 1/2 Tsp Pepper
- 2 Tbs Flour
- Bbq Sauce for pork
Instructions
- Preheat oven to 350.
- Place half the elbows, half the butter, half the cheese, half the salt, pepper, flour into the casserole dish.
- Then mix.
- Then place the second half of the elbows, butter, salt, pepper, flour & cheese into the casserole dish and mix.
- Pour in milk.
- Cover with aluminum foil and cook for 30 minutes.
- Remove from oven. Uncover.
- Stir and place back into the oven for 15 minutes.
- While mac & cheese is baking, heat the pulled pork and mix in bbq sauce.
- Once mac & cheese is done baking, scoop up a bowl and top with bbq pulled pork.
