Leftover Pork Roast Stroganoff

Leftover shredded pork roast in a creamy, rich mushroom sauce over egg noodles.

Ingredients

  • 4 tbsp butter
  • 1 8 oz pkg mushrooms, sliced
  • 1 onion, sliced
  • 1/2 cup flour
  • 4 c chicken stock
  • salt and pepper to taste
  • 1 pkg egg noodles, cooked
  • 4 tbsp green powder
  • 1/2 cup sour cream
  • 1 tbsp dijon mustard
  • 4 cups shredded roast pork meat

Instructions

  • Saute onions and mushrooms in butter until tender.
  • Add flour and cook and stir until just starts to brown.
  • Add stock all at once and whisk while boiling until thickens.
  • Add salt, pepper, green powder (if desired), sour cream, and mustard
  • Cook and stir 3 additional minutes.
  • Add pork meat and mix well.
  • Serve over cooked egg noodles.

Notes

If your pork is not already really flavorful, you'll need a good amount of salt to flavor the dish. You can also add ranch seasoning or 1/2 teaspoon of paprika to increase the flavor. It all depends on the leftover pork you are starting with.
