There is nothing more comforting than a good ole roast. What more makes you think of mom’s cooking or grandma’s than that? I love comfort food and this is a great one! And this slow cooker beef roast couldn’t be easier! And easy dinner ideas are my jam for sure!

My husband’s favorite meal his grandmother made was her roast. He still asks for me to make it sometimes. (Although it’s not like his grandma’s, I never could master her cooking “techniques” if you want to call them that)

Pot roast seasoning

The best way to season a pot roast is with lots and lots of salt and pepper. It seems like too much, but a lot of meat requires a lot of seasoning. I love to use thyme or rosemary on my beef roast as well and lots of garlic. We always use our steak seasoning on ours.

You can use a knife to poke a hole in the roast and stick cloves in the holes. That helps permeate the meat with the garlic flavor. Onions and carrots in your cooking method make the roast taste great too!

Air fryer roast beef

You can even cook a beef roast in the air fryer. There’s just about nothing that thing won’t make! It puts flavor on the outside of food that is unique.

Slow Cooker Beef Roast Recipe

Ingredients

  • 2 lb beef roast – rump sirloin, or chuck are the ones I like to use
  • 6 small potatoes
  • 2 cups sliced carrots
  • 2 stalks celery
  • 3 tbsp steak seasoning
  • 2 cups beef stock

Instructions

  • Remove the roast from the packaging and set in the bottom of the slow cooker pot.
  • Sprinkle salt and pepper on the roast.
  • Add thyme and carrots.
  • Rinse and chop celery, then add to pot.
  • Pour in beef stock.
  • Cook on high for 4 hours or low for 6-8 hours.
  • Peel, rinse, and cut potatoes into 2 inch chunks, then add to the slow cooker 45 minutes before its scheduled time to finish cooking.
  • To serve, remove the roast and veggies from the slow cooker.
  • Slice the roast.

*Note that it is most tender when cooked on low
