Brisket is so good, but there are usually a lot of leftovers. Find out some great ways to use leftover brisket to make a quick dinner. Leftover meals are some of my favorites.
You can save a ton of time and use up something that might have gone to waste for these easy dinner ideas.
Leftover brisket tacos
Tacos are the first thing that comes to my mind. Brisket tacos can be made in just a few minutes by dicing up the meat, shredding up some cheese, lettuce, whatever you want to top them with, dicing up tomatoes or avocados.
Use whatever you have around the house to top a taco. You can serve them on steamed corn tortillas or even flour or top some chips for nachos. Tacos are up to your interpretation, but any way you make them they are delish!
And these leftover meat quesadillas can be whipped up in minutes and everyone loves them. Crispy tortilla on the outside, tender and flavorful meat on the inside. Super easy too.

Leftover brisket
If you have a ton of leftover brisket and you don’t want to use it right away, dice it up and freeze it. You can store it in baggies in 1 cup servings and it’s ready to use in no time.
There are so many fun ways to use this diced up meat. You can top baked potatoes, baked sweet potatoes, scramble it in eggs.
You can use it in casseroles and soups as well. It would be great to use in rice or noodle bowls. It makes a great topping for salads too.
Leftover brisket chili
A leftover brisket chili would be a snap to make. Chop up an onion, put a little fat in a large pot and cook the onion in it until it’s tender. Next, drop in the brisket, some diced tomatoes and some chili seasoning.
You can add a can or two of beans if you like beans in your chili. I personally think it’s not chili without them. Then cook and stir until everything is combined and mixture is at a simmer.
Add a cup or two of beef stock and cook it low and slow until the flavors meld together.
