Strawberry Oatmeal Muffin Recipe
Ingredients
- 1 Cup All Purpose Flour + 1 T
- 1 Cup Sugar
- 1 Cup Old Fashioned Oats
- ½ Cup Granola
- ½ teaspoon Baking Powder
- 1 Cup Strawberries cut into small pieces
- ½ Cup Salted Butter softened at room temperature
- ½ Cup Strawberry Jam
- 2 Eggs
- ⅓ Cup Confectioners Sugar
- 1 Tablespoon Milk
Instructions
- Preheat oven to 350 degrees
- Spray a muffin tin with non-stick cooking spray or use muffin liners
- While the oven is preheating, combine flour, sugar, oats, baking powder and granola
- Mix out any lumps before adding strawberries and jam
- Combine thoroughly, but don’t overmix
- Make a well in the mixture and add softened butter and eggs
- Mix gently until completely combined
- Bake for 25-30 minutes until centers are done
- Mix confectioners sugar and milk until smooth
