- 1 Cup All Purpose Flour + 1 T
- 1 Cup Sugar
- 1 Cup Old Fashioned Oats
- ½ Cup Granola
- ½ teaspoon Baking Powder
- 1 Cup Strawberries cut into small pieces
- ½ Cup Salted Butter softened at room temperature
- ½ Cup Strawberry Jam
- 2 Eggs
- ⅓ Cup Confectioners Sugar
- 1 Tablespoon Milk
Preheat oven to 350 degrees
Spray a muffin tin with non-stick cooking spray or use muffin liners
While the oven is preheating, combine flour, sugar, oats, baking powder and granola
Mix out any lumps before adding strawberries and jam
Combine thoroughly, but don’t overmix
Make a well in the mixture and add softened butter and eggs
Mix gently until completely combined
Bake for 25-30 minutes until centers are done
Mix confectioners sugar and milk until smooth
Once muffins are cooled drizzle with glaze!
