You can make so many wonderful dishes with Rotel. You can keep a few cans on hand or keep a few bags of frozen homemade rotel in the freezer to pop out any time and add flavor to a dish.

What is rotel

Rotel is diced tomatoes with diced green chilies mixed in. Any dish that uses tomatoes, can use Rotel and add even more flavor. It can be used in dips, casseroles, soups, sauces, and more. We make big batches of it when our tomato plants are producing and freeze it to use year round.

Homemade rotel

Homemade rotel can be canned or frozen. We don’t can here because home canned foods are not allowed for daycare kids, so we freeze ours. I love having quart sized bags of frozen rotel in the freezer to dump into recipes. I mix it in pizza sauce, spaghetti sauce, soups, spicy casserole or pasta dishes, cook meat in it in the crock pot and so many things.
