What is Quiche?

Quiche is a savory, open-faced pastry dish that originated in France. It consists of a pastry crust filled with a mixture of eggs, milk, or cream, and a variety of ingredients such as cheese, vegetables, meat, or seafood. The filling is typically baked until the eggs are set and the crust is golden brown.

Quiche is often served as a breakfast, brunch, or light lunch dish and can be enjoyed warm or at room temperature. One of the most well-known varieties is quiche Lorraine, made with bacon and cheese, but quiches can be customized with endless ingredient combinations.

This quiche is easy with a store bought crust, but you are welcome to make your crust homemade as well if you prefer. The tuna blends great with the other flavors and is a great easy dinner idea for tonight!

Crustless Quiche

If you want to make your quiche crustless, don’t despair, you can easily spray your pie shell with non-stick cooking spray and bake the eggs right in the pan for a frittata-style dish rather than quiche. It’s just as delicious without a crust.

Ingredients

  • 1 store-bought pie crust or homemade if you prefer
  • 1 5 oz can albacore tuna, drained
  • 1 cup fresh spinach roughly chopped
  • 1/2 cup cooked bacon crumbled (about 4-5 slices)
  • 1/2 cup mushrooms sliced
  • 4 large eggs
  • 1 cup milk or heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dill
  • Olive oil for sautéing

Instructions

Prepare the Crust:

  • Preheat the oven to 375°F (190°C). Place the store-bought pie crust into a 9-inch pie dish and prick the bottom with a fork. Pre-bake the crust for 8-10 minutes to prevent it from getting soggy.

Cook the Vegetables:

  • Heat a little olive oil in a pan over medium heat. Sauté the mushrooms until they release their moisture and are golden brown, about 5 minutes. Add the spinach and cook until wilted, about 1-2 minutes. Set aside.

Make the Filling:

  • In a large bowl, whisk together the eggs, milk (or heavy cream), salt, pepper, and dill. Stir in the drained tuna, cooked bacon, sautéed spinach, mushrooms, and shredded cheese.
  • Pour the tuna, spinach, bacon, and mushroom mixture into the pre-baked crust, spreading it out evenly.
  • Bake the quiche in the oven for 30-35 minutes, or until the center is set and the top is golden brown. If the crust edges are browning too quickly, cover them with foil.
  • Cool and Serve:
  • Let the quiche cool for 5-10 minutes before slicing. Serve warm or at room temperature.
