Creamy Broccoli Tuna Casserole with Egg Noodles

Ingredients

  • 12 oz egg noodles cooked al dente
  • 2 cans white albacore tuna or light tuna drained
  • 2 cups fresh broccoli florets chopped
  • 1 cup parmesan cheese grated
  • 2-3 cups whole milk
  • 4 tablespoons unsalted butter
  • 4 tablespoons flour
  • 1 clove garlic
  • 1 tablespoon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup panko bread crumbs
  • 1 tablespoon unsalted butter
  • Cooking spray

Instructions

  • Grease a casserole dish with cooking spray.
  • Cook egg noodles in a medium saucepan over medium-high heat until al dente. Drain and set aside.
  • You can use the same pan to steam or blanch the chopped broccoli florets for 3-4 minutes until tender but still bright green. Drain and set aside.
  • Again, use the same pan to melt the 4 tablespoons of butter. Add the flour and stir until it just starts to brown. Stir in the milk, add the garlic, and whisk until it thickens and starts to bubble. Slowly stir in the cheese.
  • Stir until the cheese is melted and the sauce becomes creamy. Add salt and pepper for extra flavor.
  • In a large bowl, combine the cooked egg noodles, broccoli, and canned tuna. Pour the creamy cheese sauce over the mixture and gently fold it together.
  • Transfer the tuna mixture to the prepared baking dish. In a small bowl, mix panko bread crumbs with 1 tablespoon melted butter. Sprinkle the panko mixture evenly over the top of the casserole.
  • Place the baking dish in the oven and bake for 20-25 minutes until the top is golden brown and the casserole is bubbling.
  • Remove from the oven and let cool slightly before serving.
