Quiche is actually one of my favorite simple suppers in the world. So filling and comforting, yet easy as pie to make. There is something delectable about a fresh from the oven quiche recipe with a flaky crust. This bacon, red pepper, mushroom, and cheddar quiche is simply amazing!

Served with a side salad or some fruit, quiche is just perfect!

What is Quiche?

Quiche is classically a savory dish consisting of a pie crust or tart shell that is filled with a mixture of eggs, milk or cream, cheese, and usually meat of some sort. More modern quiche recipes also include the option of omitting the crust for a frittata (referred to as a crustless quiche by many).

Make Ahead Instructions for Quiche

Prepare according to the recipe instructions. Allow to cool completely and then wrap well and store in the refrigerator for up to 3 days.

Freezer Instructions for Quiche

Prepare according to the recipe instructions. Allow to cool completely and store in an airtight, freezer-safe container for up to 3 months.

To reheat and serve, allow it to thaw in the refrigerator overnight.

Bacon, Red Pepper, Mushroom, and Cheddar Quiche

Ingredients

  • 1 package bacon chopped
  • 2 tablespoons butter
  • 1 small onion chopped
  • 1 red pepper diced
  • 1 package mushrooms sliced
  • 4 eggs
  • 1 cup heavy cream
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup shredded cheddar cheese

Instructions

To make the filling for your quiche:

  • Cook the chopped bacon according to package instructions. Drain the fat and set the cooked bacon aside.
  • Using the leftover bacon fat from cooking the bacon, add the onion, red pepper, and mushrooms to the pan. Cook until everything is softened and the onion becomes translucent.
  • Return the bacon to the pan and mix it into the sauteed veggies.
  • Spoon the bacon & veggie mixture into the bottom of your pie crust. Spread evenly.
  • In a large bowl, whisk the eggs, cream, salt, and pepper together.
  • Spread the shredded cheese in an even layer over the bacon & veggie mixture, then pour the egg & cream mixture over top.

To bake your quiche:

  • Heat your oven to 350 degrees.
  • Place the quiche into the oven and bake for 45-55 minutes or until the center is completely set and the top of the quiche is lightly golden browned.
  • Slice and serve warm or cool before serving.

Mushroom Crustless Quiche

You can make the same mushroom bacon quiche crustless by mixing everything but the crust ingredients together and baking it on its own. There will be a little bit of a crust-like edge on the bottom of the quiche. It’s a great way to avoid flour or gluten in your quiche. Baked eggs are delicious no matter how you make them or what they’re in.

How Long to Bake Crustless Quiche

To bake a crustless quiche at 350 like the one with the crust, you will bake it about the same time, around 45 minutes. It may be done about 5 minutes sooner, but it will be fairly close to the same time. Just check it at the end to make sure.

Air Fryer Bacon

If you want to cook your bacon up in the air fryer, you can lay the slices out on your air fryer pan and air fry it at about 400 degrees. It may cook as fast as 5 minutes, or take up to 15 depending on thickness. It usually takes mine about 8 to 10 minutes and I usually have thick-cut bacon.

Once it’s crispy, let it sit for a couple of minutes to cool, and then crumble it into a bowl. Then drain the grease out of the air fryer tray into the skillet to start cooking your other quiche ingredients. I love the convenience of the air fryer because I don’t have to stand there and stir. But I also like doing it in the skillet because then I don’t have to clean the air fryer and the skillet since I’m already cooking vegetables in there.
