Dinner time just got easier with these fresh meals from batch-cooking recipes. It’s one of the best things I do for my home daycare. There’s no better way to spend less time in the kitchen. I make pasta dishes, chicken recipes, breakfast burritos, chicken noodle soup, taco meat, pasta sauces and so much more in bulk so my life is easier day to day.
I always say, if you’re going to make a mess (cook) you might as well get a lot done. I try to never make one lasagna, casserole, or serving of soup. If I’m getting it out, I want leftovers for at least a meal or a freezer portion to freeze for a meal later. I love easy dinners from the freezer!
Bulk frozen food
There are so many things you can prep ahead and freeze for maximum nutrition and super convenience. Here are a few things I like to freeze in portions to have ready to toss in a recipe:
- Frozen Fruits and Vegetables: Bulk frozen fruits and vegetables are convenient options for adding nutritious ingredients to meals and snacks. Examples include frozen berries, mixed vegetables, spinach, peas, and corn. I like to roast all of our pumpkins after Halloween and portion them up in one cup portions and freeze them. They can go in smoothies, soups, sauces and so much more to add fiber and lots of nutrition. Berries can be frozen individually on a sheet tray and packed up in zip lock bags once frozen so you can pour out as many as you need at once for recipes.
- Frozen Meat and Seafood: Buying meat and seafood in bulk and freezing it is a cost-effective way to stock up on protein. Common options include chicken breasts, ground beef, salmon fillets, shrimp, and pork chops. Buy the large packages, portion them into a serving for your family and freeze them like that so when you want to cook you can grab one portion.
- Frozen Baked Goods: Bulk frozen baked goods are convenient for stocking up on bread, rolls, bagels, and pastries. These items can be stored in the freezer and thawed as needed. I love making bulk pancakes or muffins and grabbing out a few to feed my daycare kids.

Easiest bulk meals
The easiest bulk meals are simple to prepare, require minimal ingredients, and can be made in large quantities to store for future meals. Here are some examples:
- Chili: Cook up a big pot of chili in the crock pot or stock pot on the stove. Double, triple, or quadruple your recipe. It’s the same mess and barely takes two seconds longer. Serve it with rice, cornbread, crackers, or over baked potatoes. Think chili dogs, chili frito pies, nachos and more. Chili freezes well and can be reheated for quick and hearty meals.
- Pasta Bake: Make a big batch of pasta sauce and cook up several packages of noodles. Layer your pasta and ingredients in several pans and top with cheese. Bake one until bubbly and golden for a comforting and filling meal, and freeze the others for future dinners. You can thaw them overnight in the fridge or just bake them from frozen covered and uncover at the last. Many different pasta bakes work well like this. Just think, at least double everything or triple or quadruple it if you have the energy. Casseroles freeze great two ways. You can buy disposable aluminum pans to freeze them in. Or you can line your casserole dish with foil, fill it, freeze it, and when it’s fully frozen, pop that casserole out and wrap it well. Then you have your dish back, but you can pop your frozen dinner back in it to bake it up when it’s time. This is a pro tip.
- Soup: Soups are incredibly versatile and easy to make in bulk. Choose a base like chicken broth or vegetable broth and add in vegetables, protein (such as chicken, beans, or lentils), grains (like rice or pasta), and seasonings. Cook until everything is tender and the flavors have melded together. Freeze portions for quick and warming meals.
- Stir-Fry: Stir-fries are quick to make and can be customized with whatever ingredients you have on hand. Cook protein (like chicken, beef, or tofu) with vegetables (such as bell peppers, broccoli, carrots, and snap peas) in a flavorful sauce. Serve over rice or noodles for a satisfying meal.
- Burrito Bowls: Prepare a big batch of burrito bowls by layering cooked rice or quinoa with beans, grilled chicken or steak, sautéed vegetables, salsa, avocado, and cheese. These bowls can be customized to suit individual tastes and preferences.
- Casserole: Casseroles are a classic bulk meal option that can be made with a variety of ingredients. Combine cooked pasta or rice with protein (like ground beef, chicken, or sausage), vegetables, sauce, and cheese. Bake until bubbly and golden for a comforting and filling dish. - BBQ Make-Ahead Freezer Meatloaf: Meatloaf is a great freezer meal. You can shape a ton of them, bake one, and freeze the others for a set and forget meal on a busy weeknight. Get baths, homework, and everything done while dinner cooks and then you’re ready for a peaceful meal.
- Make Ahead Freezer Chicken Burritos: These chicken burritos are a great bulk freezer meal to make. Just thaw them in the microwave and you’re ready to eat. You can customize them with the veggies and meats that your family likes best.
- Make Ahead Freezer Meals BBQ Pulled Pork: Pork roast is my favorite bulk meal! It’s huge and makes a ton of things. I love making bbq pulled pork that I can pull out for bbq nachos or sandwiches. My daycare kids love it. It’s inexpensive (compared to many other meats) and easy to toss in the crock pot and cook all day. You don’t even have to be home.
