Make Ahead Freezer Meals

Freezer burritos don’t always turn out as great as you think they would. You have to think ahead about the filings you put in them, not everything freezes great. And you also have to reheat them the right way. And storing them in the freezer properly is a big one too!

Here’s what it takes to make a really good freezer burrito:

  • Lots of protein, we used chicken and black beans for this recipe
  • Something starchy, we used sweet potatoes
  • Proper storage methods

Here’s what doesn’t make a really good freezer burrito:

  • Avocado
  • Sour cream
  • Lettuce

How to Make Freezer Chicken Burritos

Cook the ingredients separately. We roasted our sweet potatoes and chicken in separate pans on separate racks in the air fryer oven. A regular oven will work too. We used canned black beans, but when we make them from scratch, we do it in the crock pot.

Flour tortillas really do freeze and recook better. We used corn and it’s fine, we like the flavor way better, but you can’t pick them up when you thaw them back out, and if you used flour tortillas you can.

Warm your tortillas before rolling them. Microwaving them in a moist towel for 30 seconds will make them easier to work with whether you use flour or corn.

Don’t overstuff your burritos. You want the filling to stay inside, so leave enough room around the edges.

How to Freeze Burritos

After you’ve added all the fillings to your burrito, roll it tight. You can wrap the burrito in foil for the best freshness, but I don’t like trying to get the foil off when reheating. You can’t microwave foil, so I use glass pyrex containers that I fill completely full. I use the flat ones so my burritos come to the top and there’s not a ton of air left in there.

If you use foil, or even plastic wrap, you can stack them into containers or zip lock bags for more freshness.

The Best Way to Reheat Frozen Burritos

If you just jam the frozen burritos into the microwave, they’ll be soggy on the outside. So here’s what you can do.

  1. Set the burritos in the fridge overnight and let them thaw, then gently microwave when you’re ready to eat them.
  2. You can take them straight from the freezer, put a dab of butter in a skillet, and heat them on medium to medium low heat on each side until the tortilla is slightly browned and the filling is warmed through. It takes 5-8 minutes per side.
  3. Microwave the frozen burritos on defrost for a few minutes, then turn them over and do a few minutes more. You’ll have to check for filling doneness because all microwaves have different power.
  4. You can reheat them in a 400 degree oven for about 30-40 minutes depending on the size. They can be wrapped in foil, or in an oven safe dish that is covered, then uncover them and cook them a few more minutes to help give the tortilla the best texture.

Chicken, Sweet Potato, Black Bean Freezer Burritos

Savory, spicy black bean burritos with chicken and roasted sweet potatoes. Great fresh, freezes great, and makes a quick but healthy meal on the go.

  • 1 pound chicken breast, cut into bite sized pieces
  • 1 tbsp olive oil
  • salt, pepper, and spices to taste
  • 2 sweet potatoes, cubed into small pieces
  • 2 tbsp olive oil
  • salt, pepper, and spices to taste
  • 1 can black beans
  • 8 tortillas of choice
  • 1 tbsp taco seasoning mix
  • salsa, shredded cheese, hot peppers, of your choice for garnish


  • Toss chicken pieces in olive oil and seasonings
  • Place on sheet pan
  • Toss sweet potatoe pieces in remaining olive oil and seasoning
  • Place on a seperate sheet pan
  • Roast at 400 for about 10-15 minutes until chicken is done (internal temperature of 165 and no longer pink in the middle of each piece)
  • Remove from oven and continue to roast sweet potatoes until done (takes about 30 minutes depending on size)
  • Set aside to cool
  • Mix taco mix with drained black beans
  • Wrap tortillas in a damp towel
  • Microwave for 1 minute to soften
  • Lay tortillas out and top with chicken, sweet potatoes, beans, a sprinkle of cheese, a spoon of salsa and whatever else you'd like keeping in mind what doesn't freeze well as listed above
  • Roll tightly and place in a freezer container with an air tight lid
