Chicken, Sweet Potato, Black Bean Freezer Burritos
Savory, spicy black bean burritos with chicken and roasted sweet potatoes. Great fresh, freezes great, and makes a quick but healthy meal on the go.

Ingredients
1poundchicken breast, cut into bite sized pieces
1tbspolive oil
salt, pepper, and spices to taste
2sweet potatoes, cubed into small pieces
2tbspolive oil
salt, pepper, and spices to taste
1canblack beans
8tortillas of choice
1tbsptaco seasoning mix
salsa, shredded cheese, hot peppers, of your choice for garnish
Instructions
Toss chicken pieces in olive oil and seasonings
Place on sheet pan
Toss sweet potatoe pieces in remaining olive oil and seasoning
Place on a seperate sheet pan
Roast at 400 for about 10-15 minutes until chicken is done (internal temperature of 165 and no longer pink in the middle of each piece)
Remove from oven and continue to roast sweet potatoes until done (takes about 30 minutes depending on size)
Set aside to cool
Mix taco mix with drained black beans
Wrap tortillas in a damp towel
Microwave for 1 minute to soften
Lay tortillas out and top with chicken, sweet potatoes, beans, a sprinkle of cheese, a spoon of salsa and whatever else you'd like keeping in mind what doesn't freeze well as listed above
Roll tightly and place in a freezer container with an air tight lid
