Now back to the turkey pot pie idea. I love turkey, it’s one of my favorite meats and I love when the holidays roll around because that’s most likely the time I’m going to get to enjoy some turkey. For me, turkey is good year round, so I like to use this recipe at other times of the year too. You can also make these ham and cranberry rolls ups with turkey instead of ham for a wonderful after holiday treat. But the ham ones are amazing too! I am just a total geek about how easy leftover food makes easy dinner ideas!

Smoked Turkey Pot Pie

If you want to use smoked turkey in your leftover turkey dishes, more power to you! It gives it more flavor and a different twist. The only thing you need to do to make this a smoked turkey pot pie is use leftover smoked turkey instead of regular turkey. Boom, there you have it. A smokey pot pie delight.

Turkey Pot Pie Recipe

For this healthy leftover turkey pot pie, you just need some leftover turkey meat, a few simple ingredients you probably keep on hand, and some Kodiak buttermilk pancake mix. Making homemade poultry seasoning is a life changer and it just takes seconds to mix up a batch that will make a bunch of recipes.

If you want to take a short cut, you can use cream of chicken soup instead of the butter, onion, flour, poultry seasoning, thyme, chicken broth, and whole milk. It will taste way better if you make the roux and “gravy” from scratch, but time savers are time savers. I love em too!

Healthy Leftover Turkey Pot Pie

Ingredients

  • cup frozen mixed veggies
  • 1 ½ cup leftover white meat turkey
  • 2 Tablespoons butter
  • 1/2 onion finely diced
  • 2 tablespoons flour
  • 1/4 teaspoon poultry seasoning
  • 1/8 teaspoon dried thyme leaves
  • 2 cups chicken broth
  • 1/2 cup whole milk
  • salt & pepper to taste
  • 1 cup Kodiak buttermilk pancake mix
  • 1 egg
  • ½ cup 1% milk

Instructions

  • In a large pot, cook onion in butter over medium heat until softened, about 4 minutes.
  • Add flour and seasonings and cook 1 minute more.
  • Stir in broth a bit at a time, whisking until smooth after each addition.
  • Simmer 12-14 minutes or until vegetables are soft.
  • Add whole milk.
  • Simmer 5 minutes more.
  • Add frozen veggies and turkey meat.
  • Pour mixture into an ungreased pie dish.
  • In a medium sized bowl, mix Kodiak pancake mix, egg, and 1 % milk with a whisk or fork until
  • blended. Pour on top of chicken mixture and evenly spread.
  • Bake at 400 degrees for 30 minutes, or until golden brown
