Healthy Leftover Turkey Pot Pie

- 1½ cup frozen mixed veggies
- 1 ½ cup leftover white meat turkey
- 2 Tablespoons butter
- 1/2 onion finely diced
- 2 tablespoons flour
- 1/4 teaspoon poultry seasoning
- 1/8 teaspoon dried thyme leaves
- 2 cups chicken broth
- 1/2 cup whole milk
- salt & pepper to taste
- 1 cup Kodiak buttermilk pancake mix
- 1 egg
- ½ cup 1% milk
In a large pot, cook onion in butter over medium heat until softened, about 4 minutes.
Add flour and seasonings and cook 1 minute more.
Stir in broth a bit at a time, whisking until smooth after each addition.
Simmer 12-14 minutes or until vegetables are soft.
Add whole milk.
Simmer 5 minutes more.
Add frozen veggies and turkey meat.
Pour mixture into an ungreased pie dish.
In a medium sized bowl, mix Kodiak pancake mix, egg, and 1 % milk with a whisk or fork until
blended. Pour on top of chicken mixture and evenly spread.
Bake at 400 degrees for 30 minutes, or until golden brown
