Scrambling for an idea for dinner tonight is one of the most frustrating parts of the day to day for me. I love having a repetoire of meals that I can get ready quickly, don’t have to have anything thawed, and probably already have what it requires.

I keep a well stocked pantry, and it saves me so much time and money. It’s tempting to just get take out when you’re tired from working all day and still have a busy evening coming.

Cheese quesadillas or nachos are always a quick and easy go to. Just slice or grate some cheese. For quesadillas, put a little butter in a pan and then a tortilla, top with cheese and another tortilla, brown both sides, and enjoy. You can heat up some frozen vegetables or make these air fried vegetables to go with it and bam, you’re done.

For nachos, toast a few tortilla chips, sprinkle with cheese and let that melt a bit on the warm chips, then top as desired with lettuce, tomato, onion, peppers, cucumbers, sour cream, avocado, whatever you like.

Sandwiches are always a great pinch hitter. Add a side of coleslaw or potato salad and you got dinner. I like to keep cheese and meat handy for that.

Use a premade pizza crust or whip up some homemade dough and top it with some delicious pizza toppings. Homemade pizza can be healthy and it’s so good!

Pasta dishes can be done in a flash. We make all of these hamburger helper type pasta flavors but they are healthy, unprocessed ingredients and we are skipping all the chemicals. It’s probably just as fast as the stuff in the box cooks too.

Salads are always quick and easy. Wash and chop up some lettuce or greens, chop up some toppings, leftover meat from the fridge, lunch meat, boiled eggs, assorted fresh veggies or canned beans or corn or both, salsa, cheeses, whatever you have on hand and make a masterpiece on the top.
