Sauteed squash and onion recipe

There is nothing like the combination of bacon and onions. No matter what I put it in, it tastes like love and reminds me of a warm hug from my grandma. She is the inspiration for so much of my cooking because everything she made was oozing with her presence.

Sauteed Summer Squash and Onions

Smokey bacon and savory onion flavor permeates every bite of these flavorful, soft, comforting summer squash slices!

Ingredients

  • 4 slices bacon
  • 1 onion diced
  • 8 summer squash zucchini or yellow squash, small to medium sized.
  • 1 tsp thyme
  • salt and pepper to taste

Instructions

  • Slice all the squash into thin slices.
  • Cut the bacon into small pieces and place in a skillet on medium heat.
  • Cook and stir until bacon is crispy.
  • Remove the bacon from the pan and drain on a paper towel.
  • Add onions to the skillet and cook and stir about 2 minutes.
  • Add all the squash, the thyme, and salt and pepper to taste.
  • Cook and stir until the squash starts to soften but still has a bit of texture.
  • Remove from heat. Return the bacon to the pan and mix it in.
