Sauteed squash and onion recipe
There is nothing like the combination of bacon and onions. No matter what I put it in, it tastes like love and reminds me of a warm hug from my grandma. She is the inspiration for so much of my cooking because everything she made was oozing with her presence.

Sauteed Summer Squash and Onions
Ingredients
- 4 slices bacon
- 1 onion diced
- 8 summer squash zucchini or yellow squash, small to medium sized.
- 1 tsp thyme
- salt and pepper to taste
Instructions
- Slice all the squash into thin slices.
- Cut the bacon into small pieces and place in a skillet on medium heat.
- Cook and stir until bacon is crispy.
- Remove the bacon from the pan and drain on a paper towel.
- Add onions to the skillet and cook and stir about 2 minutes.
- Add all the squash, the thyme, and salt and pepper to taste.
- Cook and stir until the squash starts to soften but still has a bit of texture.
- Remove from heat. Return the bacon to the pan and mix it in.
