Sauteed Summer Squash and Onions

Smokey bacon and savory onion flavor permeates every bite of these flavorful, soft, comforting summer squash slices!

Ingredients

  • 4 slices bacon
  • 1 onion diced
  • 8 summer squash zucchini or yellow squash, small to medium sized.
  • 1 tsp thyme
  • salt and pepper to taste

Instructions

  • Slice all the squash into thin slices.
  • Cut the bacon into small pieces and place in a skillet on medium heat.
  • Cook and stir until bacon is crispy.
  • Remove the bacon from the pan and drain on a paper towel.
  • Add onions to the skillet and cook and stir about 2 minutes.
  • Add all the squash, the thyme, and salt and pepper to taste.
  • Cook and stir until the squash starts to soften but still has a bit of texture.
  • Remove from heat. Return the bacon to the pan and mix it in.
