Sauteed Summer Squash and Onions
Smokey bacon and savory onion flavor permeates every bite of these flavorful, soft, comforting summer squash slices!

- 4 slices bacon
- 1 onion diced
- 8 summer squash zucchini or yellow squash, small to medium sized.
- 1 tsp thyme
- salt and pepper to taste
Slice all the squash into thin slices.
Cut the bacon into small pieces and place in a skillet on medium heat.
Cook and stir until bacon is crispy.
Remove the bacon from the pan and drain on a paper towel.
Add onions to the skillet and cook and stir about 2 minutes.
Add all the squash, the thyme, and salt and pepper to taste.
Cook and stir until the squash starts to soften but still has a bit of texture.
Remove from heat. Return the bacon to the pan and mix it in.
