I am able to make this recipe gluten-free for my husband by using flour substitute in the cream of mushroom soup as well as gluten-free french fried onions or panko crumbs. It’s super easy to do and still tastes great. If you need gluten-free green bean chicken casserole in the slow cooker, it’s far less expensive to have the homemade soup than buying expensive gluten-free canned soup. And it tastes WAY better too!

Crock Pot Green Bean Chicken Casserole without Canned Soup
Ingredients
For the Casserole:
- 2 lbs boneless skinless chicken breasts or thighs
- 3 cups fresh green beans trimmed (or 2 cans, drained)
- 1 small onion diced
- 3 cloves garlic minced
- 1 batch of homemade cream of mushroom soup
- 1 cup chicken broth
- 1 cup sour cream or Greek yogurt
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese optional, for extra creaminess
For the Topping:
- 1 cup French-fried onions or panko breadcrumbs for a crispy alternative
- 1/2 cup shredded Parmesan cheese
Instructions
- Place the chicken breasts or thighs at the bottom of the slow cooker.
- Sprinkle with salt, pepper, and Italian seasoning.
- Add the onions, garlic, and green beans over the chicken.
- In a bowl, whisk together the cream of mushroom soup, chicken broth, and sour cream.
- Pour the mixture evenly over the chicken and vegetables.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Once the chicken is cooked and tender, remove it from the slow cooker and shred it with two forks.
