Ingredients

For the Casserole:

  • 2 lbs boneless skinless chicken breasts or thighs
  • 3 cups fresh green beans trimmed (or 2 cans, drained)
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 batch of homemade cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup sour cream or Greek yogurt
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese optional, for extra creaminess

For the Topping:

  • 1 cup French-fried onions or panko breadcrumbs for a crispy alternative
  • 1/2 cup shredded Parmesan cheese

Instructions

  • Place the chicken breasts or thighs at the bottom of the slow cooker.
  • Sprinkle with salt, pepper, and Italian seasoning.
  • Add the onions, garlic, and green beans over the chicken.
  • In a bowl, whisk together the cream of mushroom soup, chicken broth, and sour cream.
  • Pour the mixture evenly over the chicken and vegetables.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  • Once the chicken is cooked and tender, remove it from the slow cooker and shred it with two forks.
  • Return the shredded chicken to the slow cooker and stir to mix everything together.
  • If using cheddar cheese, stir it in and let it melt for an additional 10 minutes.
  • Sprinkle French-fried onions (or panko breadcrumbs) over the casserole.
  • Cover and let sit for 5-10 minutes to allow the topping to warm and crisp slightly.
