Pot pie of any kind is a dream come true for me. It has everything I love and this biscuit and gravy breakfast pot pie is no different! It’s heaven in a pan. It makes an easy dinner idea or something wonderful for breakfast!

It’s no secret to anyone that my grandma’s biscuits and gravy are the ultimate comfort food for me. That’s why this magnificent breakfast pot pie with homemade pork sausage gravy is on the top of my list. I usually make it with grandma’s old-fashioned biscuits, but you can buy store-bought biscuits too like I did for the recipe. I tried to show how accessible it can be. Pot pies in air fryer

This pot pie will bake fine in your air fryer oven if you have one. Or you can make it in the regular oven too. I love to use my Ninja Foodi Air Fryer Oven as often as I can. It’s faster, easier, and puts far less heat into the kitchen in the summer. So I make sure I have plenty of pans that will fit in it and when I make something, I make sure to use them.

Pot pie is a savory dish that typically consists of a pastry crust filled with a mixture of meat (such as chicken, beef, or turkey), vegetables (such as carrots, peas, and potatoes), and gravy.

The filling is often cooked together in a saucepan before being placed in a pie dish and topped with a crust made from pastry dough. The dish is then baked until the crust is golden brown and the filling is hot and bubbly. This pot pie uses biscuits because, yummy, and it uses country sausage gravy for the filling. Talk about a match made in heaven!

First, brown up your sausage and make the gravy recipe linked above (or use store-bought)

Second, mix up your biscuits linked above and set them in the fridge until the rest of the pot pie is ready (or use store-bought from a can or frozen)

Breakfast Pot Pie Recipe

Creamy rich sausage and biscuit pot pie. Biscuits and gravy and scrambled eggs all in one dish.

Ingredients

  • 1 lb blue and gold sausage or Jimmy Dean if you can’t get it
  • 6-8 eggs
  • 2 cups prepared sausage gravy
  • 1 cup shredded cheddar
  • 16 Biscuits
  • 2 tablespoons butter
  • 2 tablespoons parsley chopped

Instructions

  • Preheat oven to 375 degrees and lightly prepare a 13×9 baking dish with nonstick spray
  • Brown the sausage in a skillet over medium high heat
  • Make the gravy
  • Remove from pan into a seperate bowl
  • Add the butter, stir until melted
  • Stir in the eggs until done then stir in prepared gravy until fully combined
  • Remove from heat and set aside
  • Flatten 8 biscuits and place them in the bottom of the dish
  • Pour the sausage egg mixture over the biscuits
  • Sprinkle cheese over the egg mixture
  • Flatten remaining biscuits and lay them on top of the cheese
  • Bake for 30-40 minutes until top biscuits are golden brown
  • Garnish with parsley
  • Let sit for 5 minutes

    I added some cooked tater crowns (the flat tots) between the gravy & cheese layer. The change in texture was quite good.
