Ingredients

  • 1 can of tuna in water drained
  • 4 tbsp Greek yogurt or light mayo
  • 1 tsp Dijon mustard
  • 1 tsp ranch seasoning mix
  • 1 small cucumber thinly sliced
  • 1 small carrot grated
  • 1 handful of fresh spinach or lettuce
  • 2 whole wheat tortilla
  • Salt and pepper to taste
  • Optional: squeeze of lemon juice

Instructions

  • In a small bowl, mix the drained tuna with Greek yogurt, mustard, ranch seasoning mix, salt, and pepper.
  • Lay the tortillas flat and spread the tuna mixture evenly across the center.
  • Top with cucumber slices, grated carrot, and spinach or lettuce.
  • Roll the tortilla tightly, tucking in the sides as you go to form a wrap.
  • Slice the wrap in half and serve immediately, or wrap in foil for a portable meal.
