- 1 can of tuna in water drained
- 4 tbsp Greek yogurt or light mayo
- 1 tsp Dijon mustard
- 1 tsp ranch seasoning mix
- 1 small cucumber thinly sliced
- 1 small carrot grated
- 1 handful of fresh spinach or lettuce
- 2 whole wheat tortilla
- Salt and pepper to taste
- Optional: squeeze of lemon juice
In a small bowl, mix the drained tuna with Greek yogurt, mustard, ranch seasoning mix, salt, and pepper.
Lay the tortillas flat and spread the tuna mixture evenly across the center.
Top with cucumber slices, grated carrot, and spinach or lettuce.
Roll the tortilla tightly, tucking in the sides as you go to form a wrap.
Slice the wrap in half and serve immediately, or wrap in foil for a portable meal.
