Ingredients

  • 2 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard optional, for extra tang
  • 1 celery stalk finely chopped
  • 1 tablespoon red onion finely chopped
  • Salt and pepper to taste

Instructions

  • In a bowl, whisk together 2 eggs with a pinch of salt and pepper.
  • Heat a non-stick skillet over medium heat and add a small amount of olive oil or cooking spray.
  • Pour the eggs into the skillet, swirling to create a thin, even layer.
  • Cook for 1-2 minutes, until the eggs are set, then carefully flip and cook for another 30 seconds.
  • Set aside the first wrap and repeat the process with the remaining 2 eggs to create a second wrap.
  • In a bowl, combine the drained tuna, Greek yogurt, Dijon mustard (if using), celery, red onion, salt, and pepper. Mix until well combined.
  • Place each egg wrap on a flat surface.
