Leftover Turkey Corn Chowder
Great way to use leftover meat! Delicious soup that sticks to your ribs!

Ingredients

whole
peeled and chopped potatoes
Water to cover
1
onion, chopped
1
T
butter or oil of your choice

cooked turkey meat, chopped
1
bag
frozen corn
1/2
bag
frozen peas

chicken, beef or vegetable stock
1
c
leftover turkey gravy (you can omit if you don’t have it)
Salt and pepper to taste

shredded cheddar cheese

heavy cream (milk will work, I just had cream left from Christmas)
Instructions
Cover chopped potatoes with water and boil until fork tender.
Drain and mash.
If you have some leftover potatoes of some kind, start with the onion in your pan.
Place chopped onion in oil in a large pan and cook on low until translucent.
Add turkey, gravy, corn, peas, mashed potatoes, stock and salt and pepper and bring to a boil.
Once soup is boiling well, add shredded cheese and cream and stir to combine.
Turn off the heat and serve.
You can garnish with bacon bits, green onions or chives, shredded cheese or croutons, but it’s great on its own too.
Notes
This is a very large batch. My daycare kids eat like lumberjacks.
