Ingredients
4small potatoes whole
1 butternut squash, peeled and cut into large pieces the size of the potatoes
1 onion, peeled and cut in half
2 clovesgarlic
1pork tenderloin
2Tspicy mustard
1Tginger, freshly ground
1/4csoy sauce
2Traw sugar
2Tbalsamic vinegar
1tsalt
1/2cfresh squeezed orange juice
1/2c water or beef or chicken stock, whatever you have on hand.
Instructions
Place vegetables in crock pot
Place tenderloin on top
Add the rest of the ingredients
Cook on high for 2-3 hours until the internal temperature of the pork reaches 145 degrees
Remove meat from crock pot to rest
Remove vegetables and set aside
Pour sauce into sauce pan
Cook on medium heat, stirring occasionally until reduced and thickened
