Ingredients
1Tbspolive oil
1small oniondiced
3carrotssliced
1tbspbbq rub seasoning
32ozchicken broth
1canwhite beans, drained
1canrotelor 2 cups of homemade
2cupsshredded pork
Instructions
Chop the onion and carrot.
Add olive oil to a dutch oven or large pot and heat over medium heat.
Add onions and the carrots.
Cook for 10 minutes, or until the carrots are tender; stirring occasionally.
Add the bbq rub seasoning and cook 1 minute.
Add chicken broth, then scrape the bottom of the pan while stirring it in.
Add the rotel, white beans, and shredded pork.
Bring to a boil and simmer for 5 minutes (or longer if you have a little more time)
