Smokey Pork Soup Recipe

A simple recipe to prepare with leftovers from a pork roast, this pork soup is bursting with flavor, and a little bit of a spicy kick! (And comes together quick!)

Ingredients

  • 1 Tbsp olive oil
  • 1 small onion diced
  • 3 carrots sliced
  • 1 tbsp bbq rub seasoning
  • 32 oz chicken broth
  • 1 can white beans, drained
  • 1 can rotel or 2 cups of homemade
  • 2 cups shredded pork

Instructions

  • Chop the onion and carrot.
  • Add olive oil to a dutch oven or large pot and heat over medium heat.
  • Add onions and the carrots.
  • Cook for 10 minutes, or until the carrots are tender; stirring occasionally.
  • Add the bbq rub seasoning and cook 1 minute.
  • Add chicken broth, then scrape the bottom of the pan while stirring it in.
  • Add the rotel, white beans, and shredded pork.
  • Bring to a boil and simmer for 5 minutes (or longer if you have a little more time)
