Slow Cooker Corned Beef
Tender, juicy, flavorful corned beef that melts in your mouth and is perfect for St. Patrick's Day.

- 1 Corned Beef Brisket with spice packet 3-4lbs
- 2 Medium Carrots cut into 2 inch pieces
- 2 Celery Stalks cut into 2 inch pieces
- 1 Onion quartered
- 1 Bottle Guinness Stout Beer
- ¼ Cup Brown Raw Sugar
Glaze:
- 1 Cup Apricot Preserves
- ¼ Cup Brown Raw Sugar
- 2 Tbsp Coconut Aminoes Or soy sauce if you don't have aminoes
- 1 Tbsp Mustard
Trim excess fat off brisket; place in a crockpot along with veggies, spice packet, brown sugar, and Guinness.
Cook on low heat for 7-8 hours until fork-tender.
Carefully remove meat to a baking dish.
Prepare glaze by combining all ingredients stirring to dissolve brown sugar.
Spread glaze over the top of the Corned Beef, place in a preheated 350° F for 10-15 minutes.
Remove and allow to cool before slicing across the grain.
*Use 1 Cup of the strained drippings from the crockpot to make gravy:
Heat a couple of tablespoons of butter in a saucepan to melt; add equal amounts of flour to make a roux, cooking over medium-low heat for 2 minutes.
Add the strained crockpot drippings, stirring constantly until thickened.
Season and adjust with salt and pepper.
