Rotel Chili Cheese Dip with Ground Beef

Easy, delicious, creamy appetizer that eats like a meal. Cheesy and spicy.

Ingredients

  • 2 cups leftover chili or 1 pound of ground beef, 1 clove of crushed garlic, 1/2 teaspoon of chili powder and 1/4 teaspoon cumin
  • 1 can rotel tomatoes with green chilies
  • 1 box velveeta cheese (2 pounds)

Instructions

  • Brown the ground beef in a large skillet until fully cooked. Drain any grease.
  • Add garlic powder, chili powder, and cumin if using. Stir to coat the meat. Or use leftover chili as is.
  • Dump into the crock pot with the Rotel—juice and all
  • Add the cheese and stir occasionally until completely melted.
  • Serve hot with extra toppings if you like.
