- 12 fresh eggs, cracked into a bowl
- 1 c whole milk
- 2 tbsp butter or bacon fat
- salt and pepper to taste
- 1 tsp brown mustard
Crack eggs into a bowl and add remaining ingredients except for butter or fat
Heat pan over medium low heat
While the pan is heating, briskly whisk the eggs until everything is incorporated
Add the fat to the pan and let it melt, then pour in the mixture
Cook, scraping the bottom of the pan occasionally
Try not to overstir, this makes the eggs tough
Cook until eggs are just set and remove from heat
