Ingredients

  • 12 fresh eggs, cracked into a bowl
  • 1 c whole milk
  • 2 tbsp butter or bacon fat
  • salt and pepper to taste
  • 1 tsp brown mustard

Instructions

  • Crack eggs into a bowl and add remaining ingredients except for butter or fat
  • Heat pan over medium low heat
  • While the pan is heating, briskly whisk the eggs until everything is incorporated
  • Add the fat to the pan and let it melt, then pour in the mixture
  • Cook, scraping the bottom of the pan occasionally
  • Try not to overstir, this makes the eggs tough
  • Cook until eggs are just set and remove from heat
