Loaded Zuppa Toscana Soup Recipe

- 1 onion chopped
- 4 cloves garlic crushed
- 6 potatoes diced
- 1 pound sausage
- 6 slices bacon
- 6 cups chicken broth
- 1/2 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon italian seasoning
- 1 cup parmesan cheese shredded
- 1 can white cannellini beans drained
- 2 cups kale chopped
In a large pot or dutch oven, cook chopped bacon over medium heat until crispy
Remove and set aside
Add sausage to the pot and cook until browne, breaking into pieces.
Stir in the diced onion and cook until soft
Add garlic and pour in chicken stock, diced potatoes, italian seasoning, salt, and pepper
Bring to a boil and reduce heat to simmer for 15-20 minutes or until potatoes are fork tender
Stir in chopped kale and let set for 2-3 minutes
Remove from heat and add heavy cream and half of the parmesan cheese
Garnish with bacon bits and Parmesan cheese
