Ingredients

  • 1 onion chopped
  • 4 cloves garlic crushed
  • 6 potatoes diced
  • 1 pound sausage
  • 6 slices bacon
  • 6 cups chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon italian seasoning
  • 1 cup parmesan cheese shredded
  • 1 can white cannellini beans drained
  • 2 cups kale chopped

Instructions

  • In a large pot or dutch oven, cook chopped bacon over medium heat until crispy
  • Remove and set aside
  • Add sausage to the pot and cook until browne, breaking into pieces.
  • Stir in the diced onion and cook until soft
  • Add garlic and pour in chicken stock, diced potatoes, italian seasoning, salt, and pepper
  • Bring to a boil and reduce heat to simmer for 15-20 minutes or until potatoes are fork tender
  • Stir in chopped kale and let set for 2-3 minutes
  • Remove from heat and add heavy cream and half of the parmesan cheese
  • Garnish with bacon bits and Parmesan cheese
