  • 2 celery stalks sliced

  • 1 zucchini chopped (optional)
  • 1 cup corn fresh, frozen, or canned
  • 6 cups chicken broth or vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 c cooked rice, noodles, or beans for added heartiness optional

Instructions

  • Start by prepping your vegetables and cutting up the leftover pork chops. Having everything ready makes the process smoother and quicker.
  • In a large soup pot, heat the olive oil or butter over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften and the onions are translucent.
