Leftover Pork and Potato Soup

This comforting soup features tender chunks of leftover cooked pork, diced potatoes, carrots, celery, onion, garlic, and savory herbs all simmered together in a flavorful broth.

Ingredients

  • 2 tbsp olive oil
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1/2 tsp dried thyme
  • salt and pepper to taste
  • 8 cups chicken stock
  • 2 cups pork diced
  • 3 medium potatoes diced
  • 1 cup frozen peas
  • 1/2 cup cream

Instructions

  • Place olive oil in soup pot and add onions, carrots, and celery. Cook until tender
  • Add garlic and thyme and cook 1 minute longer
  • Add chicken stock and potatoes with salt and pepper. Bring to a boil and reduce to simmer for 20-25 minutes or until potatoes are fork tender
  • Add frozen peas and diced pork
  • Cook for 3-5 minutes until peas are thawed and pork is warmed through
  • Add cream and serve.
