2cupscooked leftover porkchopped (roast, chops, or pulled pork)
4medium potatoesdiced small
1small onionchopped
2Tablespoonsbutter
1/2teaspoonsaltor to taste
1/2teaspoonblack pepper
1/2teaspoongarlic powderoptional
Instructions
Heat a large skillet (cast iron works best) over medium heat. Add butter.
Add diced potatoes in a single layer. Cook for 10–15 minutes, stirring occasionally, until they begin to soften and turn golden brown.
Add chopped onion (and bell peppers if using). Cook for 3–5 minutes until softened.
Stir in the leftover pork and garlic (if using). Cook until everything is heated through, about 5 minutes.
Season with salt, pepper, garlic powder, and paprika. Adjust to taste.
For crispy hash, press the mixture down into the pan and let it cook undisturbed for 3–5 minutes before stirring.
