Ingredients

  • 2 cups cooked leftover pork chopped (roast, chops, or pulled pork)
  • 4 medium potatoes diced small
  • 1 small onion chopped
  • 2 Tablespoons butter
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder optional

Instructions

  • Heat a large skillet (cast iron works best) over medium heat. Add butter.
  • Add diced potatoes in a single layer. Cook for 10–15 minutes, stirring occasionally, until they begin to soften and turn golden brown.
  • Add chopped onion (and bell peppers if using). Cook for 3–5 minutes until softened.
  • Stir in the leftover pork and garlic (if using). Cook until everything is heated through, about 5 minutes.
  • Season with salt, pepper, garlic powder, and paprika. Adjust to taste.
  • For crispy hash, press the mixture down into the pan and let it cook undisturbed for 3–5 minutes before stirring.
