Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups cooked chicken shredded or diced
  • 2 cans white beans drained and rinsed
  • 1 can diced green chilies
  • 3 cups chicken broth
  • 1/2 cup sour cream

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced onion and cook for 4–5 minutes until softened.
  • Add garlic, cumin, chili powder, salt, and pepper. Stir and cook for 30 seconds until fragrant.
  • Add chicken, white beans, green chilies, and chicken broth. Stir to combine.
  • Bring to a gentle simmer and cook for 15 minutes, stirring occasionally.
  • Reduce heat to low and stir in cream cheese or sour cream until fully melted and creamy.
