Ingredients
2cans5 oz each tuna, drained
2large eggsbeaten
1/2 cupflour
1/2cupbreadcrumbspanko or regular
1clove garliccrushed
1tablespoondried parsley
1/2teaspoonbaking powder
1/2teaspoonpaprika
1/4teaspoonsalt
1/4teaspoonblack pepper
1/2cuppanko crumbs
1/4 cup pumpkin seedsfinely ground
1/4cupcorn starch
2tablespoonscoconut oilfor frying
Instructions
In a large bowl, combine the drained tuna, flour, breadcrumbs, baking powder, garlic, paprika, salt, black pepper, egg, and parsley. Mix everything well until the ingredients are fully incorporated.
In a separate bowl, mix panko, corn starch, and ground pumpkin seeds.
Scoop out the fritter batter with a spoon, and drop spoonfuls into the panko/seed mixture, and roll to coat.
Heat the coconut oil in a large skillet over medium heat. Once hot, carefully add the croquettes to the pan. Cook for about 3-4 minutes per side, or until golden brown and crispy. Avoid flipping too soon to prevent them from falling apart.
Once the croquettes are done, transfer them to a paper towel-lined plate to drain any excess oil. Serve warm with your favorite dipping sauce, such as tartar sauce, lemon aioli, or a simple squeeze of fresh lemon juice.
