Easy Tuna Biscuit Casserole without Cream Soups

Ingredients

  • 2 tablespoons butter
  • 1/2 onion chopped
  • 2 tablespoons flour
  • 2 cups whole milk
  • 2 cans tuna (5 oz.) drained
  • 1 cup broccoli chopped
  • 3 cups fresh spinach chopped
  • 1 clove garlic
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cup shredded cheddar cheese plus a few tablespoons for the top
  • 9 frozen or homemade biscuits
  • 1 tablespoon butter melted (optional, for brushing biscuits)

Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish with nonstick spray or butter.
  • In a skillet, melt butter and saute onions until translucent.
  • Add flour and cook and stir until flour just starts to brown.
  • Add milk, all at once. Cook and stir until thick and bubbly.
  • Add drained tuna, broccoli and spinach, most of the cheese, garlic, thyme, salt, and pepper. Stir until well combined.
  • Pour the tuna mixture into the prepared baking dish and spread it evenly.
  • Place the biscuits on top of the tuna mixture, spacing them evenly. If desired, brush the tops of the biscuits with melted butter for extra flavor and a golden-brown finish.
  • Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown and cooked through.
  • Sprinkle the remaining shredded cheddar cheese over the biscuits and return to the oven for an additional 3-5 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving. Enjoy this creamy, cheesy, and comforting tuna biscuit casserole with a side salad or steamed vegetables.
