In a large bowl, cut butter into flour until the mixture is crumbly and the butter pieces are pea size.
Add shredded cheese and minced jalapeno. Stir together.
Pour milk into flour mixture and stir together just until combined. Do not over stir or you’ll make the dough heavy and tough.
Turn out biscuit dough onto floured surface. Sprinkle a little flour over the top if the dough is sticky. Gently press dough together, folding over once or twice.
Pat dough into a ½ inch thick round.
Use a 2 or 2 ½ inch biscuit cutter to cut out each biscuit. Gently, reroll scraps of dough and cut out more biscuits.
Place biscuits in a greased baking dish, cast iron skillet, or on a parchment paper lined baking sheet.
