Ingredients

  • 3 cups self rising flour
  • 1 stick cold butter sliced
  • 2 jalapenos minced
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 ¼ cup milk

Instructions

  • Preheat oven to 450 degrees.
  • In a large bowl, cut butter into flour until the mixture is crumbly and the butter pieces are pea size.
  • Add shredded cheese and minced jalapeno. Stir together.
  • Pour milk into flour mixture and stir together just until combined. Do not over stir or you’ll make the dough heavy and tough.
  • Turn out biscuit dough onto floured surface. Sprinkle a little flour over the top if the dough is sticky. Gently press dough together, folding over once or twice.
  • Pat dough into a ½ inch thick round.
  • Use a 2 or 2 ½ inch biscuit cutter to cut out each biscuit. Gently, reroll scraps of dough and cut out more biscuits.
  • Place biscuits in a greased baking dish, cast iron skillet, or on a parchment paper lined baking sheet.
  • Bake for 15 minutes or until golden brown.
