Easy Crispy Tuna Fritters

Ingredients

  • 2 cans 5 ounces each tuna, drained
  • 1/2 cup panko breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 tablespoon mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil for frying

Instructions

  • In a large bowl, mix together the tuna, breadcrumbs, onion, Parmesan cheese, eggs, mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and pepper until well combined.
  • Form the mixture into small patties or fritters.
  • Heat the olive oil in a skillet over medium heat. Cook the fritters for 3-4 minutes on each side, until golden brown and crispy.
  • Serve hot
