Beef Soup for Toddlers

Beef roast and farro soup that is hearty, healthy, and satisfying that has even the pickiest eater saying, delicous! The meat is tender, the vegetables are flavorful, and it's so good!

Ingredients

  • 1 1/2 lb beef roast, cubed
  • 12 c water
  • 2 T coconut oil
  • 4 stalks celery, chopped finely
  • 1 pkg mushrooms, sliced
  • 5 carrots, chopped
  • 1 onion, chopped
  • 1 tsp salt
  • 1/2 tsp thyme
  • 1/2 tsp pepper
  • 1 clove garlic
  • 1 c dry farro (or barley or rice)

Instructions

  • Trim fat from roast and cut into 1/4 inch cubes
  • In a soup pot, add coconut oil and heat pan until ripples form in the oil
  • Add beef cubes and stir until all sides are browned
  • Add carrots, onions, celery, and mushrooms
  • Cook and stir about 1 minute
  • Add water, salt, pepper, thyme, and garlic
  • Bring to a boil, reduce heat to simmer, cover, and cook for about 1 hour
  • Add farro and bring back to a boil
  • Reduce to simmer, cover, and cook for 25 minutes until farro is tender
  • If using another grain, cook as long as instructions indicate
