Roll lemons on the cutting board with pressure from your hand to release juices.
Cut lemons in half.
Squeeze juice from lemons thoroughly.
Strain juice to remove seeds.
Add honey and stir until dissolved.
Place watermelon in blender and process until smooth.
Add to honey/lemon mixture.
Add sparkling water and stir.
Top with crushed ice.
Recipe Notes
If you want to make simple syrup instead of using honey, use 1 c. raw sugar to 1 c. water. Heat on stove until almost to a boil and stir until dissolved. Cool and use in place of honey.
