Pork Tenderloin Casserole Instant Pot

This savory pork tenderloin casserole is both hearty and delicious. It's full of flavor and has veggies too. The potatoes and green beans make it the ultimate one dish meal.

  • 2 lb potatoes
  • 1 1/2 c chicken broth
  • 2 T butter
  • salt and pepper to taste
  • 1 tsp dried dill
  • 1 clove garlic, crushed
  • 1 pork tenderloin can use pork loin as well
  • 2 T dijon mustard
  • 2 slices bacon
  • 1 lb fresh green beans
  • 1/2 lb sliced provolone cheese or shredded


  1. Set instant pot to saute

  2. Chop bacon and add to pot.

  3. Cook and stir until crispy.

  4. Remove from pan and set aside.

  5. Turn instant pot to manual.

  6. Slice potatoes into 1/4 inch slices and arrange half on bottom of pot. Sprinkle with salt, pepper and half of dill.

  7. Slice tenderloin into 1/2 inch medallions and arrange over top of potatoes. Sprinkle with salt and pepper.

  8. Dot mustard on top of meat.

  9. Sprinkle garlic over top.

  10. Cut green beans into one inch pieces and sprinkle over meat.

  11. Arrange remaining potatoes over top and sprinkle with salt, pepper and remaining dill.

  12. Add butter on top.

  13. Pour chicken broth on top.

  14. Set intant pot on manual for 2 minutes. Use the natural release for 5 minutes and then open.

  15. Place provolone cheese on top and set lid back on for 5 minutes.

  16. Remove lid. Sprinkle with bacon bits and serve.

Recipe Notes

If you'd rather make this in the oven, saute bacon, pour drippings into casserole dish, arrange other ingredients as shown. Bake at 375 for 35-40 minutes.
